This tasty soup is a twist on classic Cock-a-Leekie. It's wonderfully for a starter, lunch or supper. Having the additional protein of the beans it helps to keep you fuller for longer. It freezes well too, so can be portioned up and put in the freezer.

Ingredients
2 x Skinless Chicken Fillets Sliced into Bite size Pieces
2 x Leeks Sliced
2 x Carrots Peeled and Diced
1 x 400g Tin Butter or Cannellini Beans Drained
1.5 x Litre Hot Chicken Stock
1 x Tsp Garlic Granules
1 x Tsp Dried Sage
Ground Black Pepper
1. Put the chicken stock, chicken, leeks and carrots into a large pan and bring to the boil then simmer for 8 - 10 minutes.
2. Add the beans, garlic and sage and simmer for a further 5 minutes or so until everything is cooked through.
3. Season with black pepper and serve.
