Corned Beef Hash is one of those dishes that is comforting and perfect for a chilli day but it is high in fat, so high in syns. This version using extra lean mince beef is a wonderful healthy spin on a firm family favourite.

Ingredients
400 - 500g Extra Lean Mince Beef 5% Fat
Potatoes - I like new potatoes, so use 3-4 potatoes per person cut into 1/8th's
1 x 400g Tin Chopped Tomatoes
1 x Large Red Onion Diced
2 - 3 x Carrots Peeled and Diced
8 - 10 Cherry or Mini Plum Tomatoes
1 x Tsp Garlic Granules
1 x Tsp Mild Chilli Powder
1 x Tsp Oregano
150ml x Boiling Beef Stock
Black Pepper and salt
Frylight
1. Spray large frying pan with Frylight and soften the diced onion for a few minutes on a medium heat. Then add the chilli and garlic, stir and cook for a minute.
2. Add the mince and cook for a few minutes until it is sealed, making sure all the clumps of mince are broken up.
3. Then add the carrots, potatoes, tinned tomatoes, fresh tomatoes, stock and oregano. Bring to the boil then turn heat down, cover and simmer till nearly all the liquid has gone and the potatoes and carrots are tender. (if they are still too firm add a drop more water and carry on simmering)
4. Season with black pepper and a little salt to taste mix and serve with your favourite vegetables.
