Giant Couscous, Quinoa and Feta Salad


This dish is one that was inspired by two different dishes I have eaten recently. I've taken my favourite bits and combined them to create this vibrant zesty salad.

Makes 3-4 servings or 5-6 servings as a Starter
Cooking Time - 10 Minutes Approximately
Syn Value on Extra Easy- 1/2 syn + Healthy Extra A Choice

Ingredients
150g Dried Giant Couscous
50-75g Dried Quinoa (rinse in a sieve)
1 x Large Courgette Coarsely Grated
1 x Cup Frozen Soya Beans ( Edamame Beans)
3-4 x 45g Feta Cheese or Vegetarian alternative Crumbed
6 Tbsp Lemon Juice
1 x Level Tsp Extra Virgin Olive Oil (2 syns)
1 x cup of Mixed Fresh Herbs Basil, Mint and Flat Leaf Parsley
Pea Shoots
Baby Spinach
Ground Black Pepper

  1. Put the giant couscous in a pan of water, bring to the boil, turn down to simmer and immediately add the quinoa. Cook for 6-8 minutes or as instructions on giant couscous packet. Drain and set aside to cool.
  2. In the mean time coarsely grate the courgette, then place it in a few sheets of kitchen paper and squeeze out the excess liquid. Put in a large mixing bowl and add half the lemon juice and mix through.
  3. Put the soya beans in a pan of boiling water and cook as instructions, drain and cool.
  4. Once the couscous, quinoa mix and the soya bean have cooled, add them to the courgette and mix well.
  5. Chop up the basil, mint and parsley and add to the remaining lemon juice along with the tsp of extra virgin olive oil and mix.
  6. Add the lemon herb mix to the couscous mixture a long with plenty of ground black pepper and combined.
  7. To serve layer the pea shoots and baby spinach on each plate with the couscous mixture and 45g of crumbed feta per person and give a final twist of pepper.
* If not using the Feta as your HEA add 6 syns*
Soya Beans are sold in many markets, if not a good alternative is fresh or frozen peas.
If you can't get pea shoot you could always use rocket but just tone down the amount of black pepper used and up the lemon a little.
If you wish to have this dish over a few days add the fresh herbs, leaves and feta on the day you wish to eat it or they will loose their texture and freshness.
