Sweetcorn Fritters


 I have never thought of making sweetcorn fritters until I made them for a Slimming World taster night and boy were they popular and easy to make.

Makes 20 Approximately
Cooking Time 20-30 Minutes
Syn Value - Free

Ingredients

1 x Large Tin of Sweetcorn 325g +
3 x Large Eggs
6 Spring Onions Finely Sliced
1 x Small Chilli Finely Chopped (I went for a mild chilli but its your choice)
A Few Finely Chopped Chives
Black Pepper
Salt
Frylight

  1. Put into a blender the following - the eggs, 3/4 sweetcorn, 3/4 spring onion, the chilli and the seasoning and blitz to a coarse batter.
  2. Add the remaining sweetcorn and spring onion into the blender and just give a very quick blitz to combined but leave chunky.
  3. Heat a large frying pan on the hob and spray with Frylight. Dollop several tablespoons of the mixture into the frying pan leaving space around each one. 5-6 at most. Cook for 2-3 minutes on one side then turn over and cook the other side.
  4. Transfer to a warm plate if having hot and cover with tea towel (or put in warm oven on tray) or a cooling rack if a cold snack and repeat the process until all the mixture is used.
  5. To serve you can have them with a dip such as sweet chilli sauce (2 syns per tablespoon) or Slimming World houmous or similar. Just remember to syn it.
