Crustless Mediterranean Quiche (Can Be Made Vegetarian)

Slimming World Quiche is a mainstay of my lunchtime fare. You can choose whatever vegetables, lean cooked meats, fish, herbs and spices you like, to add to the basic quiche mixture. If you have a favourite shop bought quiche, you could use that for inspiration. You can make them in one large flan dish or as individual muffins. Great for picnics and the kids pack ups too. All the family will love them.

Makes 1 Large Quiche or 10-12 Individual Muffins

Gas Mark 5 /180 - 200
Cooking Time - 30-40 minutes


Ingredients
5-6 x Eggs
1 tub (300g) x Low Fat Onion and Chive Cottage Cheese ( I used Sainsburys)
1 x Courgette Diced
8-10 x Thin Sliced Ham all visible fat removed (Remove if Vegetarian)
1/2 Pack x Chestnut Mushrooms Sliced
2 x Peppers (use different colours) Sliced
6-8 x Baby Plum or Cherry Tomatoes Halved
1/2 - 1 tsp x Garlic Granules (Fresh or Frozen)
1 tsp Oregano
Black Pepper
Frylight


1. Prepare all the vegetables.
2. If using ham, line the dish/muffin tray with the slices of meat to make the base (Omit this step if Vegetarian).
3. Lightly saute in Frylight the prepared courgette, mushrooms, peppers and garlic until soft and liquid reduced from the vegetables.
4. Beat eggs, add cottage cheese, oregano and seasoning and mix well.
5. Put sautéed vegetables into container and pour over egg mixture and top with tomato halves.
6. Put in pre-heated oven Gas mark 5 / 180-200 for 30-40 minutes or until quiche is set and golden
7. Serve hot or cold.
