Lemon Posset (Gluten Free)

Lemon Posset is one of those decadent desserts that is definitely a 'moment on the lips, a lifetime on the hips'. Double cream, sugar and lemon, why wouldn't you like it. This recipe was just an experiment for a group taster session. I just made it up and it was a definite hit. Made from 3 ingredients and no cooking. It's really simple and Gluten Free too.


Makes 2-3 servings

Ingredients
1 Carton x Silken Tofu
1 x Lemon Zest and Juice
1 x Tbsp Sweetener (I like Truvia)


1. Put silken tofu in food processer and blend to a smooth mousse (I use a stick blender which works just as well).
2. Zest the juice the lemon.
3. Put all ingredients into a bowl and mix well.
4. Put in fridge and chill for and hour or so.
5. Before serving just give the posset another mix as the liquid do separate a little, like yogurt.


A meringue nest is added for 2.5 syns
